I imagine being pretty much at standing height. I'm still ok playing standing up but post surgery, I never regained full motor control over my left leg. It's too inaccurate to work the pedalboard and standing on it alone requires more concentration that I have available while playing as well. So ideally, I'll just lean back and park my bum while I'm pedalboarding then stand up again.
So backrests and footrests are superfluous to my purpose and height is important. Need to figure out the ideal height.

If heights an issue could you find the most comfortable stool then adjust the pedalboard height to match? Might be easier to make a riser for your board than finding the perfect stool.
Bruce, instead of a stool, you should replace all your pedals with MIDI controllable equivalents, and program MIDI sequences to control your board. You’ll just need to make your drummer play to a click track, never vary your arrangements/song structures, and learn how to program MIDI. Simple.

I feel like we're all business analysts trying to define requirements for a product/feature. Along those lines... would you want to be flexible throughout the gig, i.e. stand and walk around some of the time, but have the support of a stool in front of the pedal board when you need to tap dance?

This is the way, even better ditch pedals and amps entirely and use an AxeFX controlled by a DAW, small rack load in for the win!

Thinking from an engineering perspective, if you just want a bit of bum support to lean/perch on to give some stability to your left leg while your right leg is off the ground working the peddles you're biggest issue is likely to be guaranteed stability and not skudding off backwards when you lean in it.
Once you've solved that you don't want it getting in the way on stage any more than the minimum.
I'd be tempted to think of something like Gym equipment/Gig barriers but hopefully a little less heavy.
A plate you stand on, so your body weight is locking it down. In he middle a click in locator for a square bar pole that rises and has the pad on it (click in holder so you can disassemble and not take huge space up. The amount of plate behind you is what will stop it tipping when combined with your weight on to of it.
The thing might need a rubber type base to stop it slipping.
If you can't find anything off the shelf find a friendly metal worker and see what they could do. Maybe you could use Aluminium for lightness (but don't know how you weld that if needed).
