I've got a budget setup, Reaper DAW (paid version), M-Audio M-Track 2x2M, Presonus Eris 4.5 monitors, Audio-Technica M50X headphones, Akai MPK mini keyboard, some 12 gauge mics, and a MXL R144 ribbon mic for shits and giggles. This works really well for me as I can run the Katana direct into the interface, or use a mic if no one else is home All up its under $1500 worth of gear plus my PC from my old work which I scored for $250 when I was made redundant.

I have a Focusrite Scarlett 2i2 and Reaper. Currently only have the Katana as my interface into it. Should really get a mic or two so i can just use the orange.

Scarlett 2i2 interface, Reaper, Bias FX and Amp. That was enough for me as a starter.

Any interface with reliable drivers and long term support (Focusrite, MOTU, Audient are good in this area). Speakers are a tricky one- you definitely get what you pay for. I would recommend IK Multimedia iLoud Micro Monitors over absolutely anything with a 5" or smaller LF driver. They cost about $569 per pair, so not cheap, but completely outclass everything I've heard in that 5" or smaller bracket.
