It is a thing that some Les Pauls are just biatches for tuning...and some (my '68 RI for eg) rarely go out of tune no matter what you throw at them. I've never had an issue with tuning stability arising from the bridge (other than Strat tremolo systems) or tuners. Every time, it's been the nut either not being cut correctly for the string gauge, or the string having worn its own little path into the nut.
